It is a corporate restaurant.The quality of food has gone down a lot in recent years. This company built its reputation on fresh not frozen food, made in house recipes. Now almost everything comes in frozen. All the dim-sum (dumpling, egg roll, etc) is premade and frozen. The main entree proteins come in frozen. For example, breaded chicken is frozen breaded precooked like you would find in the grocery store. Almost all of the sauces have gone from made from scratch to completely premade. The strategy seems to be about deceiving customers by relying on the reputation they built over the last 20 years, while cutting corners and demanding higher sales and lower ticket times (lower quality service). You can still find references to the "farm to wok" philosophy online and even on the official website, when that has not been the policy used for years now. As someone who truly loved this company for years, it has made me so sad to we the direction it is going. The damage to the reputation of this restaurant, while not fully realized yet, will likely be irreparable and continue to worsen.You are paid state server minimum wage and you also tip out based on food sales. If you have a $200 check leave you a bad $5 tip because they have noticed the decline in food quality, you still tip out 4% of sales which would be $8. So in that scenario, I would lose money and have to pay the restaurant $3 to take care of the table. One more time, the quality of food and service has gone downhill by an extreme amount. You can feel the uncertainty and the confusion in the store management. Corporate continues to flip flop and change rules in strange ways that are just enough to make everyone's experience a bit worse from management to staff to guests. It is sad because I used to be proud of the food we sold.
